Göreme Cappadocia – I would suggest you spend 2-3 days in the town of Goreme in Cappadocia. It is known for some incredible geological formations known as fairy chimneys sticking out of the ground and cover most parts of the city.
Book a hotel there for Rs.3500 or $65 approx and you can get an amazing experience living in those hotels carved into chimneys. However, I would suggest that you don’t go for currency conversions which could be outrageously expensive. Even, using ATMs could turn out to be a bad deal. Better carry ample cash, enough to use for 2-3 days to avoid conversions rates. Enjoy hot-air balloon ride.
Pamukkale– Known for Mineral-rich thermal waters. The place where you can see one of the wonders of nature. The color contrast of water, white sand (calcium or sulfur sand) and the sky is indeed a moment to live by. Two days is an ideal period to spend time there.
If you have more time then go to Antalya, known for spectacular beaches and Roman ruins.
Most people, would visit Istanbul and come back, I would advise you to enhance your overall traveling experience. So better explore.
